Gingko Nut Barley Dessert

Have been planning to cook this dessert for a long time and never get down to it. It was a warm day yesterday so I decided to cook it. Some more with the durian season, everyone is down with ulcer, cough and heatiness.


Ingredients:
A bowl of white barley, soaked and rinsed
A handful of gingko nuts, washed, soaked, rinsed (remove the bitter core if you are hardworking ;) )
2 beancurd skin, soaked and break into small pieces
4 cups water
Rock sugar


Methods:
1. Bring water to boil in a pot. Add barley and 2 knots of pandan leaves. 
2. Once barley has soften, add beancurd and gingko. Lower heat and simner till gingko is soft. Add rock sugar to taste. 
3. Off the heat. Continue stirring till rock sugar dissolve.

So for a more potent effect, do you serve it it chilled or hot?

I like it warm. I personally think this dessert should be served warm.

I love it warm too but if I couldn't finish it, I would put it in the fridge. Cold ones taste good too.

Heard that Barley is good for numbness problem. I should try this since I have severe numb on my hands after gave birth.

Wouldn't mind having that if I could get it outside. Cooling! Great for this durian and dabai season.

hi Rose, I like to boil barley too cos my kids love them, they will even up the cooked barley, they won't go into waste... :)

I love this dessert too. Next time, try to put in the beancurd sheets first let it boil longer, then only add in barley and the rest. The beancurd sheets will get more soften, torn and dissolve. Eventually the barley drink looks like and the color like soy bean.

As much as I love this dessert, I still want the beancurd sheet to be completely dissolve in the water.
