What to do with the leftover Mandarin oranges from Chinese New Year? Other than eating and juicing, you could make salad from them, like I do.
This salad is refreshing and appetizing. You would love it, like how hubby and I do. The acidity from the salad dressing give the salad a distinctive taste to the sweet oranges and oniony onion.
This salad is healthy as I used healthy and organic ingredients including the bacon bits. Hormel brand of 50% less fat bacon pieces is my choice here.
Ingredients:
2 Mandarin oranges (lokam), peeled
1/2 big onion, diced
Handful of roasted almonds
1 tbsp bacon bits
Salad dressing
2 tbsp extra-virgin olive oil1 tbsp Malt Vinegar
1 tbsp raw honey
1/4 tsp salt
Methods:
1. Arrange the salad in a salad plate.
2. Mix the salad dressing in a bowl.
3. Pour the dressing onto the salad and toss and mix well.
This salad nice to be taken with a cup of black tea! Now you have all the 4 tastes in one serving. A real taste teaser.

No leftover mandarin oranges for me this year coz I did not have any, previous years still got people give us, this year dont have, huhuhu..
Lokam and raw onions? Hhhmmm, I wonder how that combination would taste like.
All gone, mine.
Amazing!!!! So so many boxes at the shops, all stacked up so high...not a single one left.
I went looking, hoping for some leftovers as the ones I had left in the house, all wrinkled, turned out to be so juicy and so sweet - not like that when we first bought them so I was hoping I could have some more... :(
no more mandarin oranges to make salad liao :(
I still have some mandarin oranges left...
This year I didn't buy any mandarin oranges, so no salad for me.
wah ...that's interesting. Usually I just peel off the mandarin skin and eat like that. Didn't thought of salad.
