Back to my kitchen and trying out new recipe. I found this delicious lamb chops recipe and gave it a try last week.
I had 2 lamb chops left in the freezer. I cooked some for my family favourite, lamb stew few days earlier.
Hubby loves lambs very much so I surprised him with a special dinner one evening. A pan-fried herbs lamb chops with mashed potatoes. Specially made for him. :)

Here is my modified recipe of the pan-fried herbs lamb chops.
The 3 fresh herbs that I used for the lamb chops; are namely dill, basil and mint. All from my mini herbs garden.
Remark: you could add white wine or sherry instead of water for more fragrant and rich taste.

Ingredients:
2 lamb chops
1/3 cups chopped dill
1/3 cups chopped cinnamon basil
1/3 cups chopped mints
4 cloves garlic, chopped
2 medium-sized tomatoes, chopped
2 tbsp. extra virgin olive oil
Salt and pepper to taste
Methods:
1. Marinate the lamb chops few hours before cooking with half of all the chopped herbs, 2 tbsp. olive oil, salt and pepper.
2. Discard some of the chopped herbs from the meat before cooking.
3. In a deep pan, add about 2 tbsp. olive oil. Once it is heated up, add in the lamb chops. Sear the lamb chops for about 3 - 4 minutes on each side. Put aside.
4. In the same pan, add in the garlic, tomatoes and remaining herbs. Saute and add salt and pepper to taste. Add a bit of water so it would not be too dry. Once boiled, turn off the heat and pour the gravy on top of the lamb chops.Remark: you could add white wine or sherry instead of water for more fragrant and rich taste.

Slurpssssss!!!! So good, all those lovely fresh herbs in your garden. I am struggling to keep my sweet basil alive. My missus' mini-Christmas tree did not last long - turned brown in a week or two. Not surprised, we are hopeless at planting anything.
