An egg a day

Think of it, it is more than an egg a day!

My family is an egg lover. We eat so many eggs that we buy 2-3 cartons per month. For breakfast I would cook at least 4 eggs for the whole family. I have not yet count lunch and dinner where I would whip up an egg dish.

If hubby is at home, he must have his usual breakfast set of bacon, hash brown, baked beans and omelette. Used to be 2 eggs for him but he has cut down to one.

The kids like to have their sandwiches for breakfast so I would fry the luncheon meat and egg for their sandwiches. Most of the times, they bring this sandwich to schools in their snack boxes.


Some days I would go for French toast as it is easy, delicious and goes well with a cup of tea.


The week when my mum-in-law was here, she introduced me to her breakfast recipe that she sells in her canteen. She called it "Roti Koboi" as she first saw it in a jeans advertisement few years ago. So from that day onwards, she experimented and cooked it in her canteen.

One morning she cooked her "Roti Koboi" for me. It turned out to be what people known as "egg-in-the-basket". She beat the egg before pour in the middle of the English bread. Feel like eating a French toast, except it is hollow in the middle!

Last week, I made my own egg in the basket breakfast. Just cut off the middle part of the bread. Once butter melt in the pan, I added my bread and let it toasts for few seconds. Flipped over and break an egg into the centre of the bread.

Let it cook for few seconds till the egg has set. Add a pinch of salt and dash of white pepper before dish it out into serving plate.

I love my egg yolk soft and runny while the egg white is not too set. I run out of cheese, otherwise I would add a slice of cheese underneath my egg. Nevertheless I enjoyed my egg in the basket.

Oooo same here, we eat more than 4 eggs per day.. Sometimes 6-8! 2 eggs for the kids for bfast, 2 half boiled eggs for me, that's 4 already.. Then 2 eggs to make steamed cakes later.. Then 2 eggs each in the noodles for the boys' lunch.. That's 6 eggs already.. And I not yet mention hubby also, kan?

I love eggs too. My favourite is simply half boiled with dark soy and white pepper

I haven't had French toast in a long time, but after having looked at your photos and read your post it makes me want to have it. Perhaps later on this week I will make it for breakfast. :)

It's ok, eggs are good...just do not overdo it. Everything is fine in moderation.

Hubby & son love eggs too & it's a must to have eggs every day. Definitely an important food source in the family.

I like to eat eggs too and simply love to eat them cooked anyway except half boiled. Always eating hard boiled eggs because I think cooking the egg this way loses almost none of the egg. To make fried eggs, some egg whites may still be sticking to the egg shells so you may be losing some of the eggs that way.

Yummy! I love eggs too, just ate one yesterday cooked by my better half in braised pork belly.

I can eat a lot of eggs, the most I've eaten is 20 (I remember coz I counted) soft boiled and with a lot of soy sauce and Sarawak white pepper. Divine, slurping that down. I'm salivating thinking about that now. I've always thought 2 soft boiled eggs are too little, even 4-5 so I made myself a treat one time.

No ill effects from eating 20 eggs though it's probably not something you should do everyday.

Oh ya, technically it's an egg in basket but I love saying toad in the hole - it's something I read about as a little kid (less than 10) and always wanted to make it, only did it when I was a teenager and in NZ - had to get good sausages for it.

I've heard it used interchangeably though e.g. toad in the hole/egg in the basket.
