Weekend Menu #9

Check out what I cooked for lunch today! Enjoy.

I did not cook this dish, just warm it up from last night dinner. RM10/kilo. Cheap right?

Chicken with Sausage and peppers

Chicken with sausage and peppers (serves 4)
(recipe is taken from The Borneo Post, Sat 19 April 2008)

4 boneless chicken breast
1 tbsp olive oil
2 sausages
1 onion, sliced in rings
1 red capsicum, cut in wide strips
1 green capsicum, cut in wide strips
2 gloves garlic, peeled and cut in three
375ml chicken stock, heated
15ml cornflour
45ml cold water
Salt and pepper

1. Heat oil in large frying pan over medium heat. Add chicken and sausage. Season and cook for 3 to 4 minutes on each side. Remove chicken from pan and set aside.
2. Cover the pan and continue cooking sausages for about 8 minute, depending on the thickness. Remove and set aside.
3. Add onion to hot pan and cook for 4 minutes over medium heat
4. Add capsicum and garlic, cook for 5 minutes. Season well; pour in chicken stock and cook for 1 minute
5. Dissolve cornflour in cold water. Incorporate into sauce in pan and cook for 1 minute.
6. Return chicken to pan and simmer for 3 minutes in sauce. Slice sausages and add to pan.
7. Simmer for 1 minute and serve hot with rice or noodles

Wow ... the famous chilly crabs. This is one of Singaporean's favorite dishes. And you are so lucky! One kilogram in Singapore will have cost around RM60+ in some restaurants and even coffeeshop.
