Weekend Menu # 81: stir-fried pork belly with salted mustard

My dearie loves salted mustard. And a better combination according to him is with pork belly. He has been asking me to cook him stir-fried pork belly with salted mustard for weeks.

Blame on my lazy bone, not a fan of salted mustard stir-fried and sickness and then we dined out on weekends, I decided to fulfill his wish last weekend by cooking him his favourite dish.

Ingredients:
300g pork belly, sliced to bite size
Few stalks of salted mustard
Ginger slices 
Chopped garlics

Marinade:
1 tbsp light soy sauce
1/2 tbsp dark soy sauce
Few dash of sesame oil
Few dash of white pepper
1/4 tbsp sugar
1/4 tbsp salt

Seasoning:
1 tbsp light soy sauce
1/2 tbsp dark soy sauce
1/2 tsp salt
3/4 cup water

Methods:
1. Marinate pork belly with marinade for an hour or so in fridge.
2. Soak and rinse salted mustard to get rid of the saltiness. Squeeze out excess water with hands. Slice the salted mustard.
3. In a heated wok without oil, add in salted mustard. Saute for few minutes till the mustard is totally dried and crunchy. Dish out and set aside.
4. In the same wok, add in about 2 tbsp oil. Once the oil is hot, toss in garlic and ginger.
5. After saute for a minute, add in the marinated meat. Stir fried till the meat is brown and cooked.
6. Add in the salted mustard to the wok. Mix well and add in the seasoning. Simmer for a minute or so. Dish out.

Fried? Don't think I've had this before - looks good, like stewed pork with those salted mustard leaves, I guess. Love that!

I think I have tasted this before and it is a very appetizing dish. Great for porridge and white rice too!
