For their recess today

My kids requested me to cook some fried noodle for them to bring to school today. Well, of course this happy mummy accommodate their request and cook noodles for them. So "7 early, 8 early" (very early in the morning), I fried some noodles for breakfast as well as somefor their snack boxes.

My fried noodle is very simple, the main ingredients being the noodles, dried prawns and eggs.



Ingredients:
5 packs of dried noodles
Garlic cloves and shallots, minced and sliced
4 eggs, beaten
Salt to taste
Light soy sauce to taste
1 stalk of spring onion, to garnish
Fried shallot, to garnish

Methods:
1. Cook the dried noodles in boiled water. Add a bit of oil in the boiled water. Cook till noodle soften. Drain and toss with a bit of oil.
2. In a wok, heat up 2 tbsp cooking oil. Add garlic and shallots and stir fried for few second.
3. Add dried prawns. Stir fry till fragrant then add eggs. Continue stirring and breaking the eggs. Add noodles into the wok.
4. Mix everything in the wok. Add salt and light soy sauce to taste.
5. Dish out. Garnish with spring onion and fried shallots.

I like it when kids request for mummy to cook them something to bring to school.. Most kids I know like to buy canteen food and don't like to pack food from home.. I pack food (dinner) to work for lunch the next day too :)

Your children must be very happy that you fulfilled their request. I like to eat fried noodles and the one you cooked looks absolutely delicious!
