I have never fry yellow noodle at home till MCO. I usually use those Lee Fah instant dry noodle for frying.
I actually prefer those instant noodle more than yellow noodle but since hubby bought few packs of yellow noodle during MCO, I got to use them up. I have been frying this noodle not once but few times throughout this period.
A simple yet tasty fried noodle that even my kids gave a thumb up. The whole plate wiped clean in few minutes!

I fried the noodle first to give it the wok fragrance. This recipe fits for 2 to 3 persons.
Ingredients
1 pack of yellow noodle
Some sliced carrots
Handful of cabbage, sliced
Handful of prawns
Minced meat
1 stalk of spring onion, sliced
Seasoning
1/2 tsp dark soy sauce
1 tsp light soy sauce
1/2 tsp salt
1/2 tsp sugar
Pinch of chicken granule
1 tbsp oyster sauce
1/2 cup water
White pepper powder
Marinade:
1/2 tsp salt
1/2 tsp cornstarch
Methods:
1. Marinate the prawns and meats for 5 to 10 minutes.
2. Heat up pan or work. Add about 1 or 2 tbsp of cooking oil. Once heated up, add in the yellow noodle and fry for few minutes. Dish out and set aside.
3. Add few tbsp of cooking oil in pan or wok. Add garlic and fry till fragrant.
4. Add in meat, prawns and fry till cooked.
5. Add in cabbage, carrot, seasoning and noodle. Stir and mix well till everything is cooked.
6. Dish out and garnish with spring onion.

Your fried yellow noodles Hokkien-style is tempting because it got thumbs up from your kids. I believe the oyster sauce helped to make it tasty. Will try it! Now where can I find yellow noodles in my area??

I also prefer to fry using the instant dry noodle instead of the yellow noodle. Probably because I prefer the springy texture.
